1. Use room temp ingredients.

Butter- place wrapped butter in microwave and heat in 5 second intervals, turning the stick of butter 1/4 turn each time. Once it starts to feel soft, remove from the microwave.

  Eggs- Place cold eggs in a bowl and fill the bowl with hot water (not boiling). Allow your eggs to sit in the water for 5 minutes.

Milk- Pour Milk into a glass measuring cup and microwave for 30 seconds. Test the temperature and continue to microwave in 10 second burst until room temperature.

2. Use a cupcake scoop for evenly portioned cupcakes.

Using a cupcake scoop allows for perfect portioned and even looking cupcakes! It’s also leads to less dripping on the pan when scraped against the bowl before pouring in cupcake liner. Purchasing different sizes are best to bake mini, standard, or huge cupcakes.

3. Do not overfill cupcake liners.

Half full, two-thirds are the more common ways to fill cupcake liner without it overflowing. You want enough for it to rise, but not so much that it rises and spills out. You also don’t want to under fill the liner also because then you’re cupcake won’t rise enough, and it will be down in the liner more.

4. Bake in the center of the rack.

If the cupcakes are baked too close to the top of the oven, they may brown too much or rise too fast, which may lead to cracked tops. Whereas if the cupcakes are baked too close to the bottom of the oven, it may take them longer to bake, and I have found that they don’t rise as nicely.

5. Use the touch test.

A simple way to test a cupcake is by giving a gentle poke. If it bounces back, the cupcakes are done, if the cupcake feels wet or does not bounce back, keep baking.

Be VERY careful when doing the touch test. This should be a very easy and gentle poke. You’re just looking to see if it bounces a little. If this seems too much of a risk then stick with the toothpick method.
